
A Sustainable Biking Dinner in Rotterdam

Last week the CEMS social committee and sustainability committee partnered up to organize this semester’s sustainable biking dinner. The twist to this otherwise common social activity amongst students was to promote conscious consumption and transportation. The hosts preparing the 3-course meal only cooked vegetarian, while the different teams commuted between the destinations by bike.
The night was full of excitement, great conversations and in particular GREAT food!

Host team 1: Leona, Klaas & Francy
Starter: Pumpkin/Apple Soup
Main: Eggplant-Lasagne
Dessert: Italian Tiramisù

Team 1’s Apple-Pumpkin Soup: (from the recipe book of Klaas’ mother)
2 shallots
1 clove of garlic peel both and chop finely
2-3 apples
500g pumpkin
(e.g. butternut squash/pumpkin)
1 large potato (150g) peel and core everything and cut into cubes
2 Tb. Oil heat oil, add onion, garlic, pumpkin and potato and fry for 2 min.
Curry add curry powder and spice up with salt and pepper
Salt + Pepper
add apples
1.25 l vegetable stock add vegetable stock and let everything simmer for 10 min.
100g whipped cream add whipped cream and let everything simmer for another 10 min.
make a puree
Salt + Pepper
Lemon juice add salt and pepper and maybe some lemon juice
